The cajun cuisine, originally from French, can be prepared very simple and easy since the ingredients are just available locally. There are three pots in this meal. One pot is for the main dishes, one pot for special sausages, steamed rice, and seafood dishes, and the last pot for the vegetables. Two most common staple meat dishes are pork sausages and shrimps. In the history, this type of food was originally developed by the poor people like the farmers and the refugees.

The spices that are usually present in this type of cuisine are bell peppers, onions, and celery. These are three favorite vegetables that adds flavor to the cuisine. These are being called as the Holy Trinity by most chefs. Other usual ingredients are cayenne pepper and garlic. Today, to make this food a lot more easy, a cajun flip n fry product was made available. This is used for breading fish, chicken, shrimp, or even vegetables.

A boudin is another favorite dish. A boudin is a kind of pork sausage which is composed of rice, green onions, pork liver, garlic, and many other spices. Boudins are made daily because even if these are kept for a longer time in freezers, still, it would not be good after a few days. The boudin is more soft in its consistency and placed in a natural casing unlike other sausage variety. This is usually served with rice dressings.

There are three most popular local dishes, the jambalaya, gumbo, and rice and gravy. A jambalaya contains rice, some meat such as beef or chicken, seafoods such as crawfish or shrimp. However, onions, green peppers, tomatoes, celery, and hot chili peppers can be found. Any additional ingredients is optional.

One of the favorite lists in cajun cooking is the gumbo, a type of soup. The term gumbo comes from original word okra, one of the main ingredient for a gumbo recipe. Okras are being used to thicken the food and as well as enhancing the vegetable taste.

File gumbos use dried sassafras leaves when thickening after the stew has been cooked. A gumbo backbone has two different variations of roux which are the dark roux and the golden brown roux. Classic gumbos are made from sausages or andouille, and also from chicken. The ingredients varies upon the availability.

Other staple dishes in cajun cuisines are rice and gravy. It has a brown colored gravy that is based on pan drippings, glazed and simmered with extra seasonings and are served on top of a steamed or boiled rice. Traditionally, the dish is being made from meat cuts that are cooked in iron pots. The meat cuts are cooked longer to make it more tender.

In other traditional events, some people boil corns, crawfishes, potatoes, and onions in large pots and mixes some other seasonings and also ingredients. During the event, attendees are asked to suck the fat and also juices from the crawfish head and abdomen.

Another event is the outdoor food event. This is being hosted by the farmers in some rural areas. The families and friends socializes by playing games, dancing, drinking, and other activities. Men will be slaughtering hogs and cook it as a main dish, while the women will make the boudin.
