Food is an essential source of energy for both humans and animals. Humans and animals occupy mainly plants and meat. Animals that only eat plants are called herbivores, while people who only eat plants, fruits and vegetables called for vegetarians. A few animals are also used as indirect food sources, for example for the production of milk (goats, cows, sheep, and camels), and eggs (chickens, ducks and geese).

Foods originate from all over the world and not natural: animals, plants, fungi, bacteria, inorganic compounds, synthetic foods. Some types of edible fungi and bacteria are used both as food themselves, and in preparation of fermented foods like bread and marinated, wine, beer, cheese, pickles and yogurt. The algae in many cultures, especially the eastern, represent an important food.

From food the body extracts the useful substances to its metabolism. Are the nutrients, all or in part, depending on organism in question, essential to life. Cereal products; by end of Neolithic period onwards most energy intake of most of human population is a source of starchy. Cereals and other products of land rich in carbohydrates are variously processed to derive nourishment.

For humans foods are multiple, selected over thousands of years, depending on their availability and their ability to provide biological sustenance. Each population attaches to food and their consumption also symbolic and cultural meanings and values. The existence of link between what we feed, the health and the development of some diseases, has been recognized since ancient times.

The food comes from animal husbandry, vegetable crops, gathering, fishing and hunting of wild animals. It varies according to quality of initial environment and culture or livestock, according to freshness of product, as any contamination (heavy metals, pesticides, biocides, microbes, radionuclides, etc.) or ruptures of cold chain. In most countries, more or less extensive control and monitoring systems exist, including for radioactive contamination.
