Entirely Different Mexican Black Bean Salad Recipe

Mexican food is so full of taste and so fulfilling that you simply cannot resist. It's not complicated to make it, but maybe you would like to try something a little bit different. So, you might start with this easy to make Mexican black bean salad recipe, and, if you find it good, you might wanna try some other, equally interesting and tasty ones.

Basic ingredients are the same, black beans from the can, canned sweet corn, avocado, sliced, lime juice, chili powder, garlic, minced, a clove or two, or more if you prefer, salt and pepper and olive oil. But, here are also two hard-cooked eggs, two potatoes cooked in skin, peeled and sliced, red sweet pepper, also sliced, white vinegar and green onion.

Combine sliced onion with vinegar and salt and set aside. You can also put it into the fridge for a while. Slice red pepper and avocado. Mix garlic, lime juice, oil and spices, add sliced onion with vinegar and add all other ingredients. Mix well and decorate with fresh coriander leaves. Add as much spices as you want, or more olive oil, according to your taste.

Another interesting variation of this popular recipe includes unusual ingredients such as spinach. You will need 250 grams of fresh, young spinach, a can of black beans, a can of corn, 200 grams feta cheese, olive oil, garlic, chili pepper, salt, three slices of toast, oregano and lime juice. First, rinse and drain canned ingredients.

Grease the pan and bake toast diced into small cubes, salted and sprinkled with oregano. In another bowl, combine lime juice, salt, pepper, sliced chili peppers, garlic and oil. Add fresh spinach. If the leaves are larger, cut them into strips first. Add toast cubes, diced feta and all other ingredients and mix well.

Grilled salad, why not. One smaller eggplant, sliced, one zucchini, sliced as well, one green pepper, sliced, one sweet red pepper, usual ingredients such as black beans and sweet corn in can, tablespoon of acetto balsamico, olive oil, minced garlic, three cloves, two nice tortillas, avocado, salt, pepper, chili powder, lime and a good grated cheese, that's what you need for this recipe.

Grill sliced zucchini, eggplant and sweet green peppers. After that, grill tortilla cut in stripes. Combine with rinsed and dried corn and beans and add sliced red sweet pepper. In another bowl combine other ingredient and spices and make a dressing. Combine this dressing with other ingredients and add grated cheese on the top. Coriander and basil leaves may be used as decoration as well.

This simple salad is really nice one. Use corncobs, black beans, avocado, garlic, salt, pepper, chili powder, lime juice, red sweet pepper, sliced and good olive oil. Then, add chopped dried tomatoes and green salad cut into stripes. Mix well and serve in tortillas, for example, or as a side dish, you will simply enjoy in it. It really doesn't take too much time to prepare, and tastes great.
